We are looking for a skilled and passionate Chef de Partie (CDP) – Tandoor & Curry to manage the Indian hot kitchen section. The ideal candidate will have strong expertise in both tandoor cooking and Indian curry preparation, ensuring high-quality food production, consistency, and hygiene standards.
Key Responsibilities:
Tandoor Section:
- Prepare and cook tandoor items such as naan, roti, kebabs, and tandoori specialties
- Handle marination and ensure proper cooking temperatures
- Maintain and operate the tandoor safely
Curry Section:
- Prepare a variety of Indian curries, gravies, and biryanis
- Ensure consistency in taste, portioning, and presentation
- Manage mise en place and daily prep activities
Kitchen Operations:
- Supervise and guide Commis chefs
- Maintain hygiene and food safety standards (HACCP)
- Monitor stock levels and minimize wastage
- Assist in menu planning and recipe standardization
Requirements:
- Proven experience as CDP or DCDP in Indian cuisine
- Strong knowledge of tandoor operations and curry preparation
- Ability to work in a fast-paced kitchen environment
- Good leadership and communication skills
- Culinary diploma or equivalent experience preferred
Experience:
- 3–6 years in a similar role
